Mark Steuer
Chef Mark’s interest in cuisine first sparked as a server, working his way through school at the University of Wisconsin. One fateful day, he stepped in for an absent chef, and soon discovered his calling was for all things culinary, not for anything to be learned in a classroom. After a quick promotion to sous chef (and a year after college graduation), he left Madison for Chicago, where his fervor for food fully evolved into a culinary career.
Hanging his chef’s hat at Mindy’s HotChocolate, he rose in the ranks from line cook to executive chef, earning three stars from the Chicago Tribune, as well as other accolades from the Chicago community. On the heels of his success, he consulted on the menu for the ever-popular Rootstock and then took over the role of the executive sous chef at The Gage downtown. Blending well-honed culinary skills with a grounded, yet inventive, personality, Steuer is moving up to make a name for himself as the lead talent behind The Bedford.
